Low-Carb-Laces-Spinatrolle

Zutaten (für 2 Personen)

400 g Blattspinat
200 g geriebener Schafskäse
200 g Ziegenfrischkäse
300 g Räucherlachs
Prise Himalaya-Salz

Zubereitung

Den Backofen auf 200 °C vorheizen und ein Backblech mit Backpapier auslegen.

Den Spinat, falls (tiefgekühlt) auftauen lassen. Anschließend mit dem geriebenen Schafs- oder Ziegenkäse in einer Schüssel vermischen, leicht salzen und auf das Backblech geben. Alles mit einem Schaber gleichmäßig zu einem Rechteck verstreichen.

Nun für ca. 15 Minuten backen, aus dem Ofen nehmen und eine Weile abkühlen lassen.

Mit dem Ziegenfrischkäse bestreichen und anschließend einfach mit dem Lachs belegen.

Alles zusammenrollen und in Butterbrotpapier oder organisches Wachspapier einwickeln. Über Nacht oder für ein paar Stunden in den Kühlschrank legen.

Ca. 1 Zentimeter dicke Scheiben von der Rolle abschneiden. Als Beilage eignet sich sehr gut ein Salat oder Gemüse. Lecker!
