2 kleine Hähnchenbrüste
14 Cherry Tomaten
2 EL Kokosnussöl
Himalaya-Salz & Pfeffer zum Würzen
5-6 Basilikum Blätter
1 Paket Büffel Mozzarella

Für die Soße
5-6 Knoblauchzehen
1 Tasse Basilikumblätter
2 EL frisch gepresster Zitronensaft
2 EL natives Olivenöl (gute Qualität)
Himalaya-Salz und Pfeffer zum Würzen

Zubereitung

Die beiden Hähnchenbrüste mit den Cherry Tomaten, Kokosnussöl, Salz und Pfeffer in einer Schüssel mischen.

Die Hähnchen auf ein mit Kokosnussöl eingepinseltes Backblech legen, die Tomaten um die Hähnchen drapieren. Basilikum Blätter auf die Hähnchen legen, Büffel Mozzarella in Scheiben geschnitten, on top.

Bei 170 Grad Umluft für 25 Minuten im Ofen backen.

Zum Schluss für die Soße die Knoblauchzehen, den Zitronensaft, das Olivenöl mit Salz und Pfeffer in einem kleinen Mixer zu einer Soße verrühren. Nochmals mit Salz und Pfeffer abschmecken. Fertig.

Die Soße auf die Hähnchen verteilen.
