SOS-Pumpkin-Crêpes

400 grams pumpkin purée (make yourself*)
4 egg whites
1 tbsp. pumpkin seasoning mix**
1 tbsp. coconut oil
1 tbsp. coconut blossom nectar (or organic honey)
2 teaspoons cream of tartar (baking powder)
30 g tapioca starch (tapioca flour)
80 g protein powder (vanilla flavor)***
3 tbsp. coconut oil (to bake the crepes)
I filled and decorated my crepes with fresh pineapple, grapefruit, and blueberries.
You can also add your favorite nuts, or use them as decoration. Spread some KAYA on top (coconut jam, check recipe in the book SOS-Exercise-Schmexercise). Enjoy this Delicacy!
Mix all ingredients - except 3 tablespoons of coconut oil - in a bowl. The dough should be lightly liquid, such as crêpe dough. If the consistency is too thick, add one tablespoon of coconut milk or still water.
Brush a pan with coconut oil. Turn the heat to small. Add a portion (ladle) of dough in the pan. Move the pan in circling motion (until the dough has been completely distributed in the pan).
Cover the pan and bake the dough for about 4 minutes, each side.
Place the crepe on a plate. Garnish the ready-baked crêpes with the fruit of your choice.
Form the crepe into a roll and enjoy!
*Pumpkin puree
Peel 450 grams of pumpkin. Remove seeds and cut into small pieces. Steam it in a steamer for about 15 min. (until the pumpkin pieces are tender).
If you don't have a steamer!
It's possible with a metal sieve: Place the sieve in a pot filled with water (the sieve must not touch the bottom of the pot, there must be space between the bottom of the pot and the sieve). Fill the pumpkin pieces in the sieve. Cover the sieve with a lid and steam the pumpkin pieces about 15 min. Knead the ready soft pumpkin pieces very finely in a bowl with a fork, or mix with an immersion blender
**Pumpkin spice mixture ¼ tsp. cinnamon ¼ tsp. nutmeg ¼ tsp. turmeric ¼ tsp. ginger powder ***Instead of protein powder, use almond powder (80 grams, finely ground)!
