Traditional "Baumkuchen" Sweet Potato Pancake

Ingredients for 8 Pancakes

450 grams sweet potatoes (peeled 380 grams)
30 grams almond flour
2 eggs
2 Tsp. creme of tartar (organic)
1 Tsp. coconut oil
1 Tbsp. tapioca starch
¼ Tsp.  cinnamon powder
¼ Tsp. turmeric powder
2 Tbsp. coconut oil (for baking)
1 pinch Himalayan salt (into the cooking water)

Recommendation:
Buy original Coconut Blossom Sugar or -Nectar from the tropics.

Remarks

I prepared the "Baumkuchen" pancakes the night before (including fillings) and the next morning I just garnished with fresh fruit. Easy to prepare for a quick breakfast. Also suitable to take it to the office, school, kindergarten or your own personal workplace.

Preparation

Peel sweet potatoes, cut into bite-sized pieces and simmer for about 15 minutes (they must be soft). Add a pinch Himalayan salt into the cooking water. Strain, fill in a porcelain or glass bowl and knead with a fork.

Add eggs and mix well. Then, almond flour, cream of tartar, tapioca starch, coconut oil (1 tsp.), cinnamon and turmeric, and mix again until a homogeneous mixture has formed.

Grease the bottom of the pan with coconut oil. Set to a medium temperature (rather low). Pour the dough into the pan (pancake shape). Cover the pan and bake the pancakes crispy-brown for about 4 minutes from each side. After first turning (best with a wooden spoon or similar) presses on the surface of the pancake gently.

Between each pancake, fill your favorite jam, kaya (coconut jam) and much more, garnish with fruit of your choice. The creative fantasy taste knows no limits.

My personal Note:

In terms of taste, the pure pancakes are rather "unimpressive" for me. I am a sweet-tooth :-). Only through the appropriate fillings between the individual layers, they get their taste-kick. Sprinkling roasted nuts also taste delicious. Or simply sprinkle with coconut nut blossom nectar or SOS chocolate. Hmmm, Heavenly - And Healthy!
