Zutaten (für 2 Portionen)

1 Zucchini
50-100 g Feldsalat
30 g Walnusskerne
2 Knoblauchzehen
½ Salatgurke
Himalaya-Salz (oder Steinsalz)

Für das Dressing
2 EL Olivenöl
2 EL Balsamico (alternativ: Granatapfel-Balsamico oder Himbeeressig)
1 Granatapfel
Himalaya-Salz und Pfeffer
Kokosnussblütenzucker
etwas Granatapfelsaft

Anmerkungen

Ein Superfood-Genuss!

Zubereitung

Die Zucchini mit einem Hobel oder einem scharfen Messer in sehr feine Streifen schneiden.

Die Walnüsse fein hacken und die Gurke grob reiben.

Knoblauch pellen und zerdrücken. Mit den Gurkenraspeln, Walnüssen und dem Salz vermischen.

Die Zucchini-Scheiben mit der Masse und dem Feldsalat füllen und einrollen. Am besten mit einem Holzstäbchen fixieren, damit sie nicht auseinander rollen und uns ständig ärgern.

In der Zwischenzeit Öl, Essig, Granatapfelsaft und etwas Kokosnussblütenzucker gut verrühren.

Die Granatapfelkerne lösen und auffangen (Am besten in einer Schüssel mit Wasser lösen oder sich so verkleiden, dass die Spritzer uns nichts anhaben können :-)).

Mit Salz und Pfeffer abschmecken und die Kerne dazugeben.

Das Ganze ca. 10 Minuten gut durchziehen lassen.

Zum Schluss über die Zucchini-Röllchen geben.
