Scharfe Karotten-Zoodles

Zutaten (für 1 Portionen)

1-2 große Karotten
1 Zwiebel
Handvoll Petersilie, gehackt
Handvoll Pinienkerne

Für die Soße
1 TL scharfe Chili-Paste
1 TL Kokosnussöl
3 TL frisch gspresster Zitronensaft
1 TL Tamari (japanische Sojasoße ohne Weizen!)
1 TL geraspelter Ingwer
1 kleine Knoblauchzehe, gerieben
Himalaya-Salz und Pfeffer nach Bedarf

Anmerkungen

Bei uns in Bayern sagen wir statt Nudeln "Zoodles" 😉

Zubereitung

Zwiebel schälen und klein hacken.

Karotten zu "Zoodles" verarbeiten.

Kokosnussöl in eine heiße Pfanne füllen.

Anschließend die Zoodles ein paar Minuten, zusammen mit den kleingehackten Zwiebeln, in der Pfanne scharf anbraten.

Alle Zutaten für die Soße miteinander verrühren und mit den Zoodles vermischen. Die gehackte Petersilie darüber streuen.

Topping Vorschlag (nicht für abends!)
Geröstete Pinienkerne und Schafskäse. Alles über die Zoodles streuen.

Mein neues Lieblingsgericht! Ohne Pinienkerne und ohne Schafskäse, ist dieses Gericht auch für den Gemüsetag (Tag 2) geeignet.
