Einfache Tomatensuppe

Zutaten (für 4 Portionen)

2 TL Kokosnussöl
1 Zwiebel
1 Möhre
1 Sellerie Stange
1 Knoblauchzehe
750 g reife Tomaten
400 g Tomaten
1 L Hühner- oder Gemüsebrühe
Himalaya-Salz
Schwarzer Pfeffer
Handvoll frische Basilikum Blätter
ein paar Tropen gutes, natives, kaltgepresstes Olivenöl zum Beträuflen

Anmerkungen

Wer es gerne noch "Tomatiger" mag, kann zusätzlich 2-3 EL Bio-Tomatenmark (ohne Zuckerzugabe!) hinzufügen.

Zubereitung

Zwiebel in dünne Ringe hobeln, Möhre in dünne Scheiben schneiden, Sellerie in dünne Streifen schneiden und die Knoblauchzehe auspressen.

Tomaten vierteln.

Kokosnussöl in einem hohen Topf erhitzen und Zwiebeln, Möhre, Sellerie sowie Knoblauch für ca. 5 Minuten andünsten.

Die geviertelten Tomaten hinzufügen und noch weitere 3-4 Minuten köcheln lassen.

Anschliessend die Brühe hinzugeben. Zum Kochen bringen, dann langsam auf geringer Hitze für 20 Minuten weiter köcheln lassen.

Topf vom Herd nehmen, ein wenig abkühlen lassen und pürieren. Mit Salz und schwarzem Pfeffer würzen.

Die Suppe mit gehaktem Basilikum garnieren, ein paar Tropfen Olivenöl darauf träufeln und heiss servieren!
