Süßkartoffeln mit Schafskäse-Creme

Zutaten (4 Portionen)

2 große Süßkartoffeln (oder 4 kleine)
200 g Schafskäse
300 g Schafsjoghurt
½ Zwiebel, kleinhacken
1 Knoblauchzehe, kleinhacken oder reiben
2 EL Kokosnussöl
2 EL natives Olivenöl
Kl. Bund frische Petersilie, kleinhaken
1 TL Basilikum-Pesto (Bioladen)
Oregano-Gewürz, Himalaya-Salz und schwarzer Pfeffer aus der Mühle zum Würzen

Anmerkungen

Die Schafskäse-Creme ist auch als Beilage für eine Zucchini-Pfanne oder als Brotaufstrich sehr lecker.

Zubereitung

Die Süßkartoffeln gründlich säubern und (mit oder ohne Schale) in Spalten schneiden. In eine hitzebeständige Glas- oder Porzellanschale legen und mit dem Kokosnussöl beträufeln. Mit Oregano, Salz und Pfeffer würzen. Bei 200° etwa 25 Minuten backen.

Die restlichen Zutaten (Schafskäse, Schafsjoghurt, Zwiebeln, Knoblauch, Petersilie, Olivenöl, Basilikum-Pesto) zu einer schönen cremigen Masse verrühren. Wer will, kann die Creme zum Schluss mit Salz und Pfeffer noch etwas abschmecken. Mit frischen Basilikum-Blätter dekorieren (siehe Foto) und/oder auf dem Teller geviertelte Tomaten dazulegen.
