1 kleine Mango
1 Avocado plus Kern
1 Ei
4-6 Scheiben Lachs
Zwiebelringe (rote Zwiebel)
Sprossen oder Kresse
Zum Würzen: Himalaya-Salz, schwarzer Pfeffer aus der Mühle

Anmerkungen

Wer es gerne scharf mag, kann auch etwas Chili-Pulver darüber streuen.

Zubereitung

Ei kochen (das Eigelb sollte noch leicht flüssig sein!)
Mango, Avocado und Lachs würfeln und übereinander schichten (evtl. mit Hilfe eines Servierrings).
Ei, Zwiebeln und Sprossen darüber legen und würzen.
Avocadokern warm abwaschen, die braune Haut abziehen, abtrocknen und darüber hobeln.
