Zutaten (für 4 Portionen)

1 kleine Melone oder die Hälfte einer großen Melone
1 Päckchen Schafskäse
1 Bund frische Minze
1 Bund Frühlingszwiebeln
2 Limetten
Himalaya-Salz
Schwarzer Pfeffer aus der Mühle
natives, kaltgepresstes Oliven-, Wallnuss- oder Hanf-Öl (vorzugsweise Bio)
Optional (alles Bio):
Handvoll Kürbis- und Sonnenblumenkerne
Handvoll Wallnüsse
Handvoll Pistazien

Anmerkungen

Hier passt wunderbar ein selbstgebackenes Knäckebrot dazu.

Zubereitung

Die Wassermelone schälen und in kleine Würfel schneiden. Den Käse ebenfalls in Würfel schneiden.

Die Frühlingszwiebeln in dünne Ringe schneiden. Alles in eine Schüssel geben und die Minzblätter darüber verteilen.

Limettensaft und ein guter Schuß Öl über den Salat geben. Mit Salz und Pfeffer würzen und alles gut mischen.

Auf dem Teller anrichten und mit Kürbis- und Sonnenblumenkernen garnieren.
