Zutaten
(für 20 Mandelhörnchen)

400 g gemahlene Mandeln (oder geschälte Mandeln so lange fein mahlen, bis Öl austritt)
200 g Kokosnussblütenzucker
150 g Imkerhonig
40 ml Rosenwasser (Apotheke)
5-7 Tropfen Bittermandelaroma (oder frisch gepresster Zitronensaft)
Gehobelte Mandeln
SOS-Schokolade herstellen (siehe Rezept auf Seite 300 im SOS-Basisbuch)

Anmerkungen

Die Mandelhörnchen können auch portionsweise eingefroren werden.

Zubereitung

Den Backofen auf 180 Grad vorheizen.

Ein bis zwei Backroste mit Backpapier auslegen.

300 g gemahlene Mandeln, Kokosnussblütenzucker  Honig, Rosenwasser und Bittermandelaroma verkneten. Je nach Geschmack nachsüßen.

Das Eiweiß steif schlagen und darunter verarbeiten.

Nun nach und nach ca.100 g gemahlene Mandeln vorsichtig unterrühren.

Die Masse mit einem Esslöffel in einzelnen Häufchen auf dem mit Backpapier ausgelegten Backrost verteilen.

Gehobelte Mandeln darauf geben und so zu einem Hörnchen formen.

12 bis 15 Min. backen.

Die Hörnchen in SOS-Schokolade (flüssig) eintauchen und für etwa 2 Stunden ruhen lassen.

Über Nacht im Kühlschrank auskühlen lassen.
